Production Process for Single-Crystal Rock Candy
Single-crystal rock sugar: Place granulated sugar into an appropriate amount of water, heat it to dissolve, and after filtering, transfer the solution into a crystallization tank. Once the sugar solution reaches supersaturation, add seed crystals and allow them to grow. After the crystals have grown to the desired size, remove them from the tank, undergo demelting and centrifugal drying, then air-dry, sieve, sort by grade, and finally package for shipment.

(1) Single-crystal rock sugar: Place granulated white sugar into an appropriate amount of water, heat it to dissolve, and after filtering, transfer the solution into a crystallization tank. Allow the sugar solution to reach supersaturation, then add seed crystals for crystal growth. Once the crystals have grown to the desired size, remove them, perform honey removal and centrifugal drying, followed by air-drying, sieving, grading, and finally packaging for shipment. (2) Polycrystalline rock sugar: Place granulated white sugar into an appropriate amount of water, heat it to dissolve, and proceed with sugar boiling until it reaches a certain concentration. Then transfer the solution into a crystallization basin and allow the crystals to mature in the crystallization chamber for one week. Afterward, remove the crystals, drain off the mother liquor completely, discard the sandy sediment, crush the crystals, dry them thoroughly, and finally mix, grade, and package them for shipment.
